Ingredients: 1 Butternut pumpin 1 brown onion 3 Desiree potatoes 2 carrots 1 Kumara (or sweet potato) and 1 garlic clove 1 vegetable stock cube 500 mL of liquid vegetable stock Instructions: Prepare the veges, chopping them according to your taste (chunky or finely) and washing them thoroughly (especially if you dropped a piece on the floor!). Fry the onion, garlic and carrot, over a moderate heat until the onion and garlic soften. Add the remaining chopped veges, and the stock and cook over a high flame until the soup starts to bubble. Reduce the heat to a simmer, and cook the veges until just soft. Check the seasoning. Mash the soup with a potato masher for a chunky soup, or blend in a food processor for a puree. This soup is best served chunky, as it is a thing of beauty with all the sunset coloured veges combining in the bowl. Serve with crusty bread, freshly chopped parsely and shallots and either thickened cream or sour cream.
