While the TV is tuned to the Olympics over the next two weeks, why not channel your inner-Olympian in the kitchen? Olympian and TODAY Olympic correspondent Lindsey Vonn has a sweet spot for banana bread, and shared her favorite recipe with TODAY.

Lindsey Vonn's banana bread

  • 4 bananas
  • 1 cup sugar (organic brown sugar is recommended)
  • 1 egg
  • 2-3 big sccops of organic apple sauce
  • 1 1/2 cups whole wheat flour
  • 1 tsp. baking soda
  • 1/3 tsp. salt
  • A dash of nutmeg and cinnamon

Preheat the oven to 350 degrees. Mix bananas, sugar, egg and apple sauce in a medium bowl. In another bowl, mix the flour, baking soda, salt, nutmeg and cinnamon. Mix both of the bowl mixtures together and put the combination into a non-stick bread pan. Bake for 50 minutes or until golden brown.

Note: You can also add one more scoop of apple sauce or add organic chocolate chips for a treat!
