Whole Roasted Sea Bass Tacos

Ingredients

  • 1 sea bass
  • 1 coarse sea salt
  • 1 black pepper
  • 1 bunch fennel leaves
  • 3 bunch bay leaves
  • 1 bunch lemon
  • 1 bunch thyme
  • 3 tablespoon olive oil

Preparation

Baking Directions:

Pre-heat oven to 425 degrees Fahrenheit.

Season the inside of the fish with salt and pepper.

  Fill the cavity with fennel, bay leaf, lemon and thyme.

Drizzle olive oil onto the outside of the fish and place on baking sheet and into hot oven.

  Cook for 20 minutes, checking if fish is done by piercing fish at thickest part with a metal skewer (it should be warm).

Remove from oven and let cool for 10 minutes.

  Pull off skin and gently pull meat off of bones.

To serve, place fish on large platter and garnish with your favorite herbs, Boston lettuce and radicchio.

  You can also place small amounts of relishes, salsas, compotes and hummus on the platter.
