Ingredients
- 1 tablespoon corn or vegetable oil
- 1 tablespoon onion
- 2 clove garlic
- 1 1/3 pound lean turkey
- 1 pound red bell pepper
- 1 1/2 cup corn kernels
- 1 can tomatoes
- 3 can scallions
- 1 teaspoon poultry seasoning
- 1 1/2 tablespoon chili powder
- 1 tablespoon cumin
- 2 ounce red hot or tabasco, cayenne pepper sauce
- 2 ounce Coarse salt and pepper
- 2 ounce Tortilla chips and shredded cheese
Preparation
Baking Directions:
Heat a deep pot over medium high heat.
Add oil and onion and sauté 3 to 5 minutes.
Add garlic and cook 1 minute more.
Add turkey and brown 5 minutes.
Add bell pepper, corn and tomatoes.
Bring to a bubble; add scallions, spices, cayenne sauce, salt and pepper.
Reduce heat and simmer 10 minutes.
Serve with chips and cheese.
