Tuna
  • 1 pound tuna loin
  • 1/2 pound crabmeat
  • 1/2 pound arugula
  • 1 stick celery
  • 1 stick carrot
Soy Vinaigrette
  • 1 pound tuna loin
  • 1/2 pound crabmeat
  • 1/2 pound arugula
  • 1 stick celery
  • 1 stick carrot
  • 2 ounce soy sauce
  • 1/2 ounce ginger
  • 1 tablespoon mustard
  • 1 tablespoon garlic
  • 4 ounce olive oil
  • 1 ounce balsamic sauce

Preparation

Baking Directions:

Procedure:Mix julienne carrots and celery.

Place in cold water to maintain crispness.

Arrange arugula in the center of the plate.

Cut tuna in thin slices and cover the arugula.

Place crabmeat around the salad and drizzle with soy vinaigrette.

Soy vinaigrette:In a bowl, mix soy sauce, balsamic, ginger, mustard, garlic.

Add extra virgin olive oil stirring constantly.
