Ingredients
- 4 ripe plum tomatoes
- 4 slice rustic bread, toasted
- 1 tablespoon extra-virgin olive oil
- 4 ounce good quality canned tuna
Preparation
Baking Directions:
Cut the tomatoes in half.
Place a grater over a large mixing bowl.
Rub the open face of the tomato into the grater until the flesh is gone.
Throw away the skin.
Whisk in the olive oil.
Season to taste with salt.
Spoon the tomato mixture onto the toast.
Top each slice with tuna and drizzle with a little more oil.
Sprinkle with a little chives and sea salt.
