Tenderloin Sandwiches with Gorgonzola

Ingredients

  • 1 beef filet (about 21/2 lb.), trimmed
  • 1 clove garlic, halved
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 pound gorgonzola cheese, sliced
  • 1 bunch arugula, trimmed
  • 20 bunch thick slices whole grain bread

Preparation

Baking Directions:

1.

Heat oven to 450ºF.

Rub beef with cut side of garlic clove and olive oil.

3.

Place on rack in roasting pan.

Season with salt and pepper.

Roast filet 30 min.

or until an instant-read thermometer registers 145ºF for medium-rare.

4.

Remove from oven.

Cool to room temperature before carving.

5.

Alternately layer sliced beef, cheese and arugula leaves on 10 bread slices.

Top with remaining slices.
