Summer berry fool

Ingredients

  • 2 pint fresh strawberries
  • 2 pint fresh raspberries
  • 1 pint fresh blackberries
  • 1 pint fresh blueberries
  • 3/4 cup granulated sugar
  • 3 teaspoon vanilla extract
  • 1/2 cup raspberry brandy or berry liquor
  • 1 pint mascarpone cheese
  • 2 pint heavy cream
  • 2 tablespoon vanilla extract
  • 1/4 tablespoon confectioners sugar
  • 1/2 cup sliced toasted almonds

Preparation

Baking Directions:

1.

Take half each strawberries, raspberries, blueberries and blackberries.

Place in a blender with ¾ cup granulated sugar, 1 teaspoon vanilla extract and berry brandy; puree all together.

Note: If berries are tart, increase the amount of sugar to make sweeter.

Place all remaining berries in a bowl.

In a mixing bowl, add the heavy cream and mascarpone together plus 2 teaspoons vanilla extract.

Mix together heavy cream and mascarpone at low speed with balloon whip.

Whip until soft peaks form, then add confectioner's sugar.

Continue to whip until firm stiff peaks are formed.

5.

In a large bowl, mix berry puree and fresh berries together.

Gently fold in whipped cream; mix until all is incorporated.

Fill your choice of a chilled parfait glass, martini glass or rocks glass.

Refrigerate until ready to serve.

Can be made up to 2 hours before serving.

Remove from refrigerator, top with toasted almonds, and serve.
