  • 1 pound strawberries
  • 1 tablespoon vinegar
  • 6 tablespoon sugar
  • 1 cup greek-style yogurt
  • 2 tablespoon crème fraiche or cream
  • 6 sprig fresh mint

This is a line, simple preparation that demands a minimum of effort with maximized flavor results.

The vinegar and sugar combination serves tobring out the color and flavor of the berries, while the yogurt cream provides just the proper lactic tang for a refreshing balance.

Equipment: 6 martini-style glasses.

1: Place the martini-style glasses in the refrigerator.

2: In a large bowl, combine the strawberries, vinegar, and 4 tablespoons of sugar.

Stir gently.

Cover securely with plastic wrap and refrigerate for 30 minutes to 1 hour.

3: At serving time, combine the yogurt and crème fraIche in a bowl and whisk gently to combine, adding the remaining 2 tablespoons of sugar to taste; the mixture should remain quite firm.
