Spinach, feta and pimento pepper dip

Ingredients

  • 1 small shallot, peeled
  • 1 5-ounce can water chestnuts, rinsed
  • 1/2 cup minced pimento peppers
  • 1/2 cup cream cheese
  • 1/2 cup feta cheese
  • 1/4 cup sour cream
  • 1 teaspoon minced garlic
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 6 ounce baby spinach (fresh)
  • 4 tablespoon chopped fresh chives

Preparation

Baking Directions:

Pulse shallot and water chestnuts in a food processor until coarsely chopped.

Add cream cheese, feta cheese, sour cream, lemon juice, salt and pepper and pulse until just combined.

Add spinach, chives, garlic, pimento pepper and pulse until incorporated.

Serve with pita chips or your favorite crackers.
