Spicy blue corn tortillas with cheesy corn dip

Ingredients

  • 4 1/2 cup frozen corn, thawed
  • 12 ounce cream cheese
  • 3 tablespoon sour cream
  • 3/4 cup cheddar, plus 3/4 cups for sprinkling
  • 3/4 teaspoon salt
  • 3 tablespoon flour

Preparation

Baking Directions:

Preheat the oven to 350° F.

In a food processor or blender, puree 2 cups of corn.

In a large bowl, stir all ingredients, except 3/4 cup of cheese, together until evenly mixed.

4.

Spread mixture in an 8” x 8” baking dish.

Sprinkle reserved cheese evenly on top.

Bake in preheated oven 20 minutes.
