Spicy beef burrito

Ingredients

  • 3 ounce 90% lean ground sirloin
  • 1/4 cup salsa, preferably smooth
  • 1/8 teaspoon kosher salt
  • 1/4 cup fat free refried beans
  • 1 cup 10-inch flour tortilla, warmed
  • 1 cup shredded romaine lettuce
  • 2 tablespoon shredded pepper jack cheese
  • 1/4 cup thinly sliced sweet onion
  • 1/4 cup diced tomato
  • 1 tablespoon plain nonfat yogurt

Preparation

Baking Directions:

Preheat a small nonstick skillet sprayed with nonstick cooking spray over medium high heat.

Add beef and sauté until just cooked through.

Add 3 tablespoons salsa, salt and beans and cook until well combined and hot, 3-5 minutes; set aside.

Top tortilla with lettuce, beef mixture, cheese, onion, tomato, 1 tablespoon salsa and yogurt.

Roll tightly and serve.
