Soft Shell Crab Sandwich with Beefsteak Tomato and Lemon-Anchovy Mayonnaise

Ingredients

  • Soft Shell Crab
  • Beef-steak tomato
  • Bacon Slices
  • Lettuce
  • Extra Virgin Olive Oil
  • Lemon-Anchovy Mayonnaise
  • Country Bread
  • Flour

Preparation

Baking Directions:

Dredge the soft shell crab in seasoned flour and pan fry in olive oil.

When cooked, drain off excess oil from crab on paper towel.

Brush bread with olive oil.

Layer the bacon, lettuce and tomato on the bread along with the soft shell crab.

Drizzle mayonnaise in the center and put it all together.

Gently grill sandwich, making sure not to press down hard.

Allow the bread to crisp at 400º-425ºF for 7-10 minutes.
