SHRIMP AND SCALLOP CEVICHE WITH SHISO-AVOCADO

Ingredients

  • 8 contessa brand large-size scallops
  • 8 contessa brand large shrimp
  • 2 shallots
  • 1 lemon
  • 1 limes
  • 1 orange
  • 1 red jalapeno
  • 1 tablespoon naturally brewed soy sauce
  • 2 tablespoon avocadoes
  • 2 tablespoon shiso leaves

Preparation

Baking Directions:

In a small bowl, combine the scallops, shrimp, avocado, lemon juice, 1 lime juice, orange juice, jalapeno, soy sauce and very gently toss to combine.

Salt and black pepper to taste.

Place in the refrigerator for 15 minutes to ‘cook’.

The shrimp and scallops will turn slightly opaque.

Divide the shrimp and scallop mixture among the 4 chilled martini glasses pouring in the juice.

In a small bowl, gently combine the avocado, shiso and lime juice.

Salt and black pepper to taste.

Top with the shiso-avocado mix, garnish with chips and serve.
