Ingredients

  • 1/4 cup butter
  • 1/4 cup shallot
  • 1/4 cup onion
  • 1 cup cornmeal
  • 1 cup flour
  • 6 tablespoon sugar
  • 1 tablespoon baking powder
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1/4 cup milk
  • 1/4 cup buttermilk
  • 1/4 cup egg
  • 1 tablespoon pepper

Preparation

Baking Directions:

Dice the shallots and the onion, and caramelize in a saucepan with a tablespoon of butter.

Meanwhile, melt the remaining 1/4 cup of butter in another small saucepan.

In a mixing bowl, sift together all of the dry ingredients, add the milk, buttermilk, and the melted butter.

Stir to mix but do not over stir.

Fold in the shallots and the onions.

Bake at 350 degrees in a muffin pan for fifteen to twenty minutes until golden brown.
