Chef notes

TODAY nutritionist Joy Bauer shares a slim way to enjoy s'mores with a fraction of the calories.

Ingredients

  • 20 large marshmallows (about 1 large bag)
  • 1 cup semi-sweet chocolate chips
  • 5 large graham cracker sheets, crushed into a powder
  • 20 lollipop sticks

Preparation

Place crushed graham crackers in a bowl.

Melt the chocolate chips in the microwave by heating for 15 to 30 seconds at a time, stirring in between, until chocolate is smooth and velvety. Or melt the chocolate on the stovetop in a double boiler or saucepan over low heat.

Dip the top part of the lollipop stick in melted chocolate, then pierce marshmallows with lollipop sticks, twisting until they are securely in the middle of the marshmallow. To prepare “s’mores pops,” carefully dip the tip of each marshmallow in the chocolate. Then, dip into the graham cracker crumbs. To set and display your pretty pops, place in a large mug or bowl filled with chocolate chips or lentils to help keep them in place while they firm. Alternatively, you can place them on a plate or baking sheet covered with parchment paper. You can also skip the lollipop sticks and simply line dipped marshmallows on a festive platter. A fun twist: Feel free to get creative with your graham crackers and opt for plain, cinnamon, chocolate, or a combination of all three.
