Ingredients

  • 1 red pepper cut into 1 1/2 inch pieces
  • 1 yellow pepper cut into 1 1/2 inch pieces
  • 1 red onion peeled and cut into 1 1/2 inch pieces
  • 2 carrots cut into 1 1/2 inch pieces
  • 1 parsnip cut into 1 1/2 inch pieces
  • 1/2 pound thin asparagus cut into 2 inch lengths
  • 2 clove garlic, minced
  • 1 teaspoon dried basil

Preparation

Baking Directions:

Preheat oven to 450 degrees F.

Toss veggies with olive oil, garlic, basil & season with salt, pepper and place all (except asparagus) on a baking sheet.

Cook 15 minutes, stir vegetables, add asparagus and cook 15 minutes more or until vegetables are crisp and tender.
