Roasted red pepper aioli

Ingredients

  • 1 large clove garlic
  • 1/2 cup chopped roasted red peppers
  • 1/3 cup mayonnaise, or light canola mayo
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt

Preparation

Baking Directions:

Place the garlic in the bowl of a food processor fitted with a metal blade and pulse to chop.

Add the red pepper and process until the garlic and peppers are well blended.

Add the mayonnaise, olive oil, salt, and pepper and process mixture until smooth.

Place aioli into a tightly sealed container and refrigerate until ready to use.

It will keep refrigerated for up to one week.
