ROASTED-GARLIC MASHED POTATOES

Ingredients

  • 2 pound potatoes
  • 1 1/2 cup heavy cream
  • 7 tablespoon unsalted butter
  • 3/4 cup roasted garlic puree
  • 3/4 cup kosher salt

Preparation

Baking Directions:

Roasted garlic preparationPeel 1 cup garlic and place on baking sheet.

Sprinkle 1 tablespoon extra virgin olive oil, salt and pepper, and cover with aluminum foil.

Slowly roast in an oven at 325 degrees for 1 hour.

Let cool and grind into paste with a food processor.

Place potatoes in a saucepan full of cold water and bring to a boil.

Cook for approximately 20 minutes.

Drain and set aside.

In another saucepan, melt butter and add cream and heat until it comes to a boil.

Mix in potatoes and garlic; mash all together.

Season with salt and serve immediately.
