RICOTTA FRITTERS

Ingredients

  • 1 pound ricotta cheese
  • 4 pound eggs
  • 1/2 cup all purpose flour
  • 1/2 cup cake flour
  • 1 tablespoon baking powder
  • 1 pinch salt
  • 1/2 teaspoon vanilla extract
  • 1/4 cup 10x sugar

Preparation

Baking Directions:

1.

Mix eggs and sugar.

Add ricotta and vanilla.

Sift together dry ingredients, add to egg mixture.

Beat until smooth.

3.

Fill pot (or deep fryer) with oil, heat to 350F.

Drop dough into hot oil by the tablespoonful.

5.

Fry until golden brown.

6.

Remove to paper towel to drain.

7.

Dust with powdered sugar, drizzle with warm honey and fruit preserves, and serve immediately.
