What could be better than a gooey dip with three kinds of melted cheese? That dip served in a hollowed out pumpkin!

Ingredients

  • 1 pumpkin
  • 3 cups grated mozzarella cheese
  • 1 cup grated parmesan cheese
  • 2 teaspoons dried oregano
  • 2 teaspoons dried basil
  • Olive oil
  • Kosher salt
  • Fresh ground pepper
  • Chili oil
  • Cilantro leaves

Preparation

Preheat oven to 450 degrees F. Line a baking sheet with parchment paper and drizzle with olive oil. With caution using a sharp knife, cut the top off of the pumpkin and discard. Hollow out the pumpkin by scooping out the seeds and stringy core. Hint: Make sure not to remove too much pumpkin from the inside, as the pumpkin will give the queso fundido lots of flavor.

Place pumpkin on baking sheet and drizzle with olive oil and season with salt and pepper. Place in the center rack of the oven and bake for about 45-50 minutes.

In a medium size bowl add mozzarella and parmesan cheese and dried herbs. Drizzle with olive oil and season with salt and pepper. Toss to mix. Place cheese inside hollowed pumpkin and bake for about 25 minutes until cheese has melted. Remove from oven and drizzle chili oil on cheese and top with cilantro leaves for garnish.

Serve immediately with warm tortillas or tortilla chips and enjoy!
