PUPUSAS (STUFFED CORN TURNOVERS)

Ingredients

  • 1 pound masa harina
  • 1/3 cup unsalted butter
  • 2 tablespoon lard
  • 1 tablespoon onion
  • 1 cup refried black beans
  • 1 cup queso blanco
  • 1 cup canola oil
  • 1 cup salt
  • 1 cup salsa

Preparation

Baking Directions:

In a large bowl or electric mixer, combine the masa harina, melted butter, and 1 cup of warm water; you may need to add a little more water to make a moist, smooth dough.

Cover and set aside.

Melt the lard in a skillet over medium heat.

Add the onion and cook for 5 minutes, until soft.

Add the refried beans and cook, stirring, for 5 minutes to combine and heat through.

Remove from the heat.

Preheat a nonstick griddle over a medium flame and keep hot.

Put the dough in a plastic bag to prevent it from drying out while you work.

Pinch off walnut-size pieces of dough and roll them in the moistened palms of your hands until smooth.

Place the balls of dough between two pieces of plastic and press down with your hand to flatten to a patty about 3 inches in diameter and up to 1/4 inch thick.

Add 1 tablespoon of the bean filling and 1 tablespoon of the grated cheese in the center of a circle.

Cap the filling with another corn-dough disc and pinch around the edges to form a tight seal.

Brush both sides of the pupusas with oil and cook on the hot griddle for 5 minutes on each side, turning frequently, until browned.

Serving Directions:

Sprinkle with salt and serve with your favorite salsa or hot sauce.
