Puffy Apple Pancake

Ingredients

  • 2 tablespoon butter or margarine
  • 1/2 cup sugar
  • 6 cup Granny Smith or Newtown Pippin apples
  • 3 cup egg
  • 3/4 cup milk
  • 3/4 cup all-purpose flour
  • 1/4 teaspoon salt

Preparation

Baking Directions:

Preheat oven to 425 degrees.

  In oven-safe 12-inch skillet, combine butter, 1/2 cup sugar and water, and heat to boiling over medium-high heat.

  Add apples and cook, stirring occasionally, until apples are golden and sugar mixture begins to caramelize, about 15 minutes.

Meanwhile, in blender, combine eggs, milk, flour, remaining 2 tablespoons sugar and salt, and blend until smooth.

Pour batter over apples.

  Place skillet in oven and bake until pancake has puffed and is golden, about 15 minutes.

 

Serving Directions:

Serve hot.
