Pork tenderloin with warm plum salsa

Ingredients

For pork:
  • 1 pork tenderloin (1 to 11/2 pounds)
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 3 tablespoon olive oil
  • 3 tablespoon scallions, sliced, for garnish
Plum salsa
  • 1 pork tenderloin (1 to 11/2 pounds)
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 3 tablespoon olive oil
  • 3 tablespoon scallions, sliced, for garnish
  • 2 tablespoon olive oil
  • 1 tablespoon medium yellow onion, diced
  • 1 teaspoon fresh ginger, minced
  • 2 clove garlic, chopped
  • 1 clove small red jalapeño pepper, seeded and finely diced
  • 3 clove plums, pitted and diced
  • 2 tablespoon apple cider vinegar

Preparation

Serving Directions:

Remove the pork from the refrigerator about 30 minutes before you are ready to cook it and let it come to room temperature.

Season all sides of the pork thoroughly with salt and pepper.

Preheat the oven to 325F.

Heat the olive oil in a large skillet over medium-high heat.

Sear the tenderloin on all sides, about 2 to 3 minutes per side.

Place the tenderloin in a baking dish and roast in the oven for 20 to 25 minutes, or until the internal temperature reaches 140F.

While the tenderloin is cooking, make the plum salsa.

Heat the olive oil in a large skillet over medium heat.

Add the onion, ginger, and garlic and cook for 2 minutes.

Add the jalapeño, plums, and vinegar and season with salt and pepper.

Cook for 1 to 2 minutes, until just heated through.

Let the tenderloin rest for 5 minutes before slicing.

Arrange the slices on a serving platter and top with warm plum salsa.

Garnish with the scallions.
