  • 6 ounce unsalted butter (soft)
Truffle au Gratin Ingredients
  • 2 nice sized lobster tails (14 – 16 ounces each)
  • 1 pound pecorino cheese grated
  • 6 ounce unsalted butter (soft)
  • 2 pound peeled potatoes
  • 1/4 quart heavy cream
  • 1/2 tablespoon garlic, chopped
  • 1 tablespoon truffle oil
  • 10 ounce grated pecorino
Key Lime Beurre Blanc Sauce Ingredients
  • 2 nice sized lobster tails (14 – 16 ounces each)
  • 1 pound pecorino cheese grated
  • 6 ounce unsalted butter (soft)
  • 2 pound peeled potatoes
  • 1/4 quart heavy cream
  • 1/2 tablespoon garlic, chopped
  • 1 tablespoon truffle oil
  • 10 ounce grated pecorino
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon chopped garlic
  • 1/2 teaspoon chopped shallots
  • 1/2 cup heavy cream
  • 2 ounce white wine
  • 8 ounce butter

Cut down the shell and pull meat out.

Place meat on top of shell.

Place lobster tail in metal pan.

Spread 3 oz.

butter on each lobster tail.

Place tail in oven and cook for 20-30 minutes.

In a mandoline, slice potatoes very thin.

Add the remainder of the cheese on the top and wrap with foil.

Cook for about 45 min in the oven until done.
