Ingredients

  • 3 tablespoon olive oil
  • 1 tablespoon garlic
  • 2 cup leeks
  • 1 can tomatoes
  • 1 can juice
  • 1 can Salt and pepper
  • 2 quart chicken stock
  • 3 tablespoon honey
  • 1/2 loaf italian bread
  • 1 cup basil

Preparation

Baking Directions:

In a pasta pot, sauté the olive oil and garlic over medium heat for 2 minutes, or until the garlic turns light brown.

Add the leeks and sauté for about 5 minutes, or until soft.

Add the diced tomato and juice.

Season with the salt and pepper to taste.

Add the chicken stock and simmer over low heat for about 30 minutes, or until you see the soup start to thicken.

Add the honey, bread and basil.

Season with salt and pepper to taste, and let the soup rest for approximately 1/2 hour before serving.

Quickly reheat soup and serve immediately.
