Pan-roasted fish with West Coast basting, topped with fresh salsa of tomato, chili, cucumber and cilantro

Ingredients

Basting marinade
  • 2 large filets of fish (arctic char, perch, monk fish, yellowtail snapper or halibut)
  • 2 tablespoon butter
  • 1 tablespoon soy sauce
  • 1 teaspoon mild curry powder
  • 1 teaspoon garlic clove, crushed
Salsa
  • 2 large filets of fish (arctic char, perch, monk fish, yellowtail snapper or halibut)
  • 2 tablespoon butter
  • 1 tablespoon soy sauce
  • 1 teaspoon mild curry powder
  • 1 teaspoon garlic clove, crushed
  • 2 ripe tomatoes
  • 1 small cucumber
  • 1 small red onion
  • 1 seeded and chopped green chili (jalapeño)
  • 1/4 cup olive oil

Preparation

Baking Directions:

Blend basting marinade ingredients.

Set aside.

Coat fish filets with olive oil.

Sauté in pan with olive oil while basting fish with marinade mixture for 8-10 minutes, depending on the thickness of the fillets.

Coarsely chop salsa ingredients and combine.

Set aside.

Remove fish from heat and plate.

Top with salsa as garnish and serve immediately.
