Ingredients
Basting marinade
- 2 large filets of fish (arctic char, perch, monk fish, yellowtail snapper or halibut)
- 2 tablespoon butter
- 1 tablespoon soy sauce
- 1 teaspoon mild curry powder
- 1 teaspoon garlic clove, crushed
Salsa
- 2 large filets of fish (arctic char, perch, monk fish, yellowtail snapper or halibut)
- 2 tablespoon butter
- 1 tablespoon soy sauce
- 1 teaspoon mild curry powder
- 1 teaspoon garlic clove, crushed
- 2 ripe tomatoes
- 1 small cucumber
- 1 small red onion
- 1 seeded and chopped green chili (jalapeño)
- 1/4 cup olive oil
Preparation
Baking Directions:
Blend basting marinade ingredients.
Set aside.
Coat fish filets with olive oil.
Sauté in pan with olive oil while basting fish with marinade mixture for 8-10 minutes, depending on the thickness of the fillets.
Coarsely chop salsa ingredients and combine.
Set aside.
Remove fish from heat and plate.
Top with salsa as garnish and serve immediately.
