Ingredients

  • 1 vine ripe tomato
  • 3 ounce laura chenel goat cheese (can substitute any soft goat cheese)
  • 2 ounce spears of arugula
  • 1 ounce cypress grove bermuda triangle (can substitute any aged firm goat cheese)
  • 1/4 cup roasted pine nuts

Steal This Recipe® step-by-step Instructions1. Core the top of the tomato to remove the vine cap, and evenly slice the tomato into four layers.

Lay each piece down separately and sprinkle with a small amount of kosher salt and freshly ground pepper.

3.

Take a small amount of soft goat cheese and form a ball for the top of the tomato.

4.

Divide the remaining goat cheese into three equal portions.

5.

Roll each portion into a ball and flatten it to equal the width of the tomato.

6.

Begin stacking the love apple, alternating the tomato slices with the goat cheese.

7.

Place the small ball on the top of the tomato and insert two spears of arugula.

8.

Place the love apple on a plate and garnish with a slice of Cypress Grove Bermuda Triangle, roasted pine nuts, basil oil and grenadine, and fresh pomegranate seeds.
