LIAM’S REFRIGERATOR COOKIES

Ingredients

  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 1 cup shortening
  • 4 cup flour
  • 1 cup walnuts
  • 2 teaspoon baking powder
  • 4 teaspoon eggs
  • 2 teaspoon cinnamon
  • 1 teaspoon vanilla extract

Liam had the most frightening refrigerator I’ve ever beheld.

Not only were there many containers of unrecognizable substances and a carton of eggs he claimed had been there since he moved in, but also the carcasses of several small animals that he wanted to dissect.

After a few months of dating I decided to clean out Liam’s refrigerator.

No amount of whining or badgering could make him clean it, so I borrowed a gas mask from my vet neighbor, bought two bottles of 409 and rubber gloves, and went to work.

It took two hours and three sponges to turn the refrigerator back into an acceptable repository for food, but I actually enjoyed myself, likening the process to growing up, throwing things away that were rotten or no longer needed.

It was exhilarating to enact such change.

The only thing I didn’t throw away was a roll of frozen cookie dough that had been wrapped in foil and placed inside two Ziploc bags.

I unwrapped the roll, let it thaw a bit, sliced it and baked some cookies.

When Liam came home that day and smelled the combination of cookies and 409, he freaked out.

“I’m an adult! I don’t need anyone to take care of me!” he bellowed.

He said some other things about my cats and my haircut, and that was that.

It was over.

I never beg in relationships (okay, maybe once), but I begged with all my might for the cookie recipe.

By some miracle (actually, it was the agreement that I would give him my electric pencil sharpener, which he’d always loved) he acquiesced and now this recipe is my very own.

I’m sharing it, and you can even keep your electric pencil sharpener.

Those things never really work anyway.

Preheat the oven to 350 degrees F.

Mix the ingredients and form dough into two rolls.

Wrap in plastic wrap and put in the freezer overnight (or as long as you want).

Unwrap, slice thinly and bake for 10 minutes.

Yummy!
