Lemon chicken

Ingredients

  • 6 chicken cutlets, pounded thin
  • 1/4 cup all purpose flour
  • 1 1/2 cup white wine
  • 2 cup or 3 lemons
  • 1 teaspoon grated lemon zest
  • 1/4 teaspoon dried sage
  • 1/2 teaspoon white pepper

Preparation

Baking Directions:

Put salt and pepper into the flour and dust the chicken lightly.

Heat the oil and butter in a large skillet.

Saute the chicken lightly till done.

Remove to a platter.

In the same skillet add the wine and stir over medium heat.

Let the wine reduce a little bit.

Add the lemon juice, lemon zest, sage, pepper, salt.

Continue stirring until the sauce is reduced.

The lemon flavor should be the most pronounced.

If it’s not, add more lemon juice.

Return the chicken to the skillet.

Bathe them in the lemon juice and turn the heat off.

Garnish with lemon slices.
