Ingredients
- 1 tablespoon olive oil
- 3/4 cup red onion
- 2 cup idaho or russet potatoes
- 1 cup sweet bell peppers
- 2 teaspoon jalapeño pepper
- 2 teaspoon clove garlic
- 2 teaspoon cayenne pepper
- 2 teaspoon kosher salt
- 2 teaspoon black pepper
Preparation
Baking Directions:
Warm the olive oil in a large iron skillet and cook the onion over medium heat until it turns translucent.
Add the potatoes, peppers and garlic, stirring constantly.
While stirring, add cayenne, salt and pepper to taste.
Cook until crispy and golden brown.
