Herring Beet Salad

Ingredients

  • 2 tablespoon canola oil
  • 1 tablespoon medium red onion, halved and thinly sliced
  • 2 tablespoon granny smith apples, quartered, cored, and thinly sliced
  • 1/4 cup freshly squeezed lemon juice
  • 4 cup pickled beets, thinly sliced
  • 2 tablespoon drained capers
  • 2 tablespoon mayonnaise
  • 2 tablespoon sour cream
  • 4 tablespoon pickled herring filets, thinly sliced
  • 2 tablespoon finely chopped fresh flat-leaf parsley
  • 1 tablespoon finely chopped fresh chives

Preparation

Baking Directions:

Heat the oil in a large skillet over medium-high heat.

Add the onion and apples and sauté for 3 to 5 minutes, until the apples are softened.

Transfer to a medium bowl and sprinkle with the lemon juice.

Add the beets and capers and toss well.

Mix the mayonnaise and sour cream together, then add to the salad, tossing to coat.

Season with salt and pepper to taste.

Fold in the herring, toss well.

Serving Directions:

Transfer the salad to a serving bowl or individual plates, garnish with the parsley and chives, and serve.
