Yes, you can eat ice cream for breakfast when you make this healthy vegan version. Top it with your favorite fruit, nuts, seeds or granola.
Ingredients
- 2 frozen bananas
- 1/2 cup frozen blueberries
- 1 tablespoon almond butter
- Almond milk, as needed
Optional toppings
- Vegan granola
- Fresh berries
- Unsweetened shredded coconut
- Chia seeds
Preparation
In a food processor, combine bananas, blueberries and almond butter. Process until smooth (be patient, as this may take a few minutes). If you still have trouble processing, add a little almond milk, 1 tablespoon at a time.
Serve in bowls and top with granola, berries, coconut, and/or chia seeds.
