Halibut with olives

Ingredients

  • 12 green olives stone in
  • 12 black olives stone in
  • 12 basil leaves cut in half
  • 200 ml olive oil
  • 1 heaped tablespoon very small capers

Preparation

Baking Directions:

Cut petals off the olives, cut cherry tomatoes in half.

Put capers, tomatoes and olive petals in bowl.

Add olive oil and lemon juice to bowl.

Season to tastePlace it somewhere warm — in sunshine or by stove to remove the chill.

Shallow-fry halibut in a little olive oil for approximately 3 minutes each side (It may take up to 8 minutes depending on size of steak.)

Put the fish on a platter.

With a slotted spoon lift out the garnish and scatter randomly on the fish.

Take a little of the oil and lemon juice and pour over.

Sprinkle with cut basil.

Serve.
