Grilled Brick Chicken

Ingredients

  • 4 (2-pound) semi-boned whole chickens split in half, thigh bone and breast bone
  • 8 bricks, each wrapped in foil
  • 1/4 cup lemon juice
  • 4 cup garlic cloves, crushed
  • 5 1/2 cup extra virgin olive oil
  • 1 teaspoon fresh oregano
  • 1 teaspoon chopped rosemary

Preparation

Baking Directions:

In a large bowl, mix together lemon juice, garlic, extra virgin olive oil, oregano, rosemary.

Place the chicken breasts in a large baking pan and pour the mixture on top; marinate for 12 hours in the refrigerator.

Spray grill rack with vegetable oil spray and prepare barbecue medium high heat.

Re-season chicken with salt and pepper, place on grill skin side down and top each piece with a brick.

Grill 10 minutes per side under brick until skin is golden brown and crispy.

Serve immediately.
