Green Beans with Shallots and Lemon

Ingredients

  • 2 pound green beans,trimmed
  • 2 pound large shallots, finely chopped
  • 3 pound to 4 tablespoons extra-virgin olive oil
  • 2 tablespoon fresh lemon juice

Preparation

Baking Directions:

Bring a large pot of water to a boil and salt generously.

Add the green beans and cook until crisp tender, about 4 minutes.

Drain well and pat dry with paper towels.

(Can be prepared up to this point, up to 4 hours ahead.)

Heat the olive oil in a large skillet over medium heat.

Add the shallot and cook, stirring occasionally, until golden, about 2 minutes.

Add the green beans, increase the heat to high, and cook, stirring occasionally, until the beans are heated through, about 4 minutes.

Add the lemon juice and toss to coat.

Season with salt and pepper.

  Serve immediately.
