FRIED OYSTER SALAD

Ingredients

  • 1 cup flour
  • 3 cup egg whites
  • 1/2 cup beer
  • 1/2 cup Salt and pepper
  • 2 cup vegetable
  • 18 cup oysters
  • 8 cup tomatoes
  • 1 pound mixed baby greens
  • 1 tablespoon fennel
  • 3/4 pound baby string beans
For the dressing
  • 1 cup flour
  • 3 cup egg whites
  • 1/2 cup beer
  • 1/2 cup Salt and pepper
  • 2 cup vegetable
  • 18 cup oysters
  • 8 cup tomatoes
  • 1 pound mixed baby greens
  • 1 tablespoon fennel
  • 3/4 pound baby string beans
  • Salt and pepper
  • 3/4 cup extra-virgin olive oil
  • 3/4 cup balsamic vinegar

Preparation

Baking Directions:

In a bowl, combine flour, egg whites, salt, and pepper.

Mix well.

Pour beer in slowly and mix well.

Set aside.

In another bowl, combine the baby greens, fennel, string beans, tomatoes, salt, pepper, olive oil, and balsamic vinegar, and toss.

Set aside.

Open the oysters.

Save the shells.

Soak the oysters in the batter.

Heat the frying oil to 375 degrees, and fry the oysters till crisp on the outside, about 30 minutes.

To serve, set the salad on 6 plates and top with 2 fried oysters on each plate and a third oyster on the half shell to each plate.
