Fresh Peach Soup with Sour Cream and Mint

Ingredients

  • 8 peaches, skinned, pitted and sliced
  • 2 white peaches, pitted, cut into small dice for garnish
  • 2 yellow peaches, pitted, cut into small dice for garnish
  • 1 cup heavy cream whipped to soft peaks with and 1 teaspoon of sugar, set aside in refrigerator for garnish
  • 1 cup water
  • 1/2 cup fresh-squeezed orange juice
  • 2 tablespoon fresh-squeezed lime juice
  • 2 tablespoon honey
  • 2 tablespoon peach liquor
  • 1/4 cup sour cream
  • 1/4 cup Sprigs of mint for garnish

Preparation

Baking Directions:

Place peeled sliced peaches in a pan with 1 cup water, orange juice, lime juice, honey and peach liquor.

Bring to a boil and simmer until peaches are soft.

Remove from heat, set aside to cool, then process until smooth in a blender, then add sour cream, blend and refrigerate until cold.

Serve soup by ladling into chilled bowls, garnish center of soup with small dice of peaches, small dollop of whipped cream and sprig of mint.
