Eggplant with garlic and parsley

Ingredients

  • 3 tablespoon extra virgin olive oil, plus a little more for garnish
  • 1/2 cup chopped fresh parsley leaves, plus more for garnish
  • 1 tablespoon minced garlic
  • 1/2 cup bread crumbs
  • 1 cup large or 2 medium eggplant

Preparation

Baking Directions:

Mix together the first five ingredients.

Rinse and dry the eggplant, trim off the ends, and cut into one-inch slices.

Score the flesh on one side of each slice in several places.

Spread and press the spice mixture to the gashes, then put the slices into a microwave-safe dish.

Partially cover the dish (waxed paper works well) and heat on high power for 5 minutes.

Remove the cover and continue to cook for another 2 to 5 minutes, or until very soft.

Garnish with a little more parsley and oil and serve hot or warm.
