Crock-pot bean soup

Ingredients

  • 1 pound white beans
  • 1 pound smoked ham hock or 1 lb. smoked ham, diced
  • 1 cup celery, sliced
  • 2 clove garlic
  • 1 cup onion, chopped
  • 1 cup carrots, chopped
  • 2 cup bay leaves
  • 16 ounce stewed tomatoes
  • 10 3/4 ounce condensed tomato soup
  • 2 cup green beans, washed and cut into 1 inch batons
  • 1/4 cup parmesean cheese
  • 4 teaspoon extra virgin olive oil
  • 1 teaspoon butter

Preparation

Baking Directions:

Soak beans overnight in 4 cups water.

Combine all ingredients in crock pot.

Add water to cover and mix well.

Cover and cook on high setting 3 hours, turn to low setting and cook for 8 to 14 hours.

Remove bay leaves when done.

In last half hour, add green beans and butter.

 

Serving Directions:

Serve in bowls and garnish with grated Parmesan cheese, EVOO, red pepper flakes.

 

Tips:

Can be cooked entire time on high setting for 4 to 6 hours.
