- 2 tablespoon grated horseradish in vinegar
- 1/2 cup sour cream

If you are able to find some fresh horseradish, use it for this sauce — a classic for beef.
Buy a whole horseradish root; wrapped in plastic wrap, it will keep for a few weeks in the refrigerator.
Alternatively, peel and grate the whole thing, then mix it with 1/2 cup white-wine vinegar and a pinch of salt.
This can be stored in a tightly closed jar for weeks.
Squeeze out any excess vinegar from the grated horseradish.
Lightly whip the cream with the salt.
Mix in the horseradish.
