Makes 6 to 8 servings
Ingredients
- 1 tablespoon red wine vinegar or freshly squeezed lemon juice
- 1/4 cup olive oil
- 1 tablespoon minced garlic
- 1 cup chopped tomatoes
- 2 cup cooked corn kernels
- 4 cup cooked or canned white beans, drained and rinsed
- 1/4 cup chopped fresh basil leaves
Preparation
Baking Directions:
Whisk together the vinegar, olive oil, and a sprinkle of salt and pepper in a large bowl.
Add the garlic, tomatoes, corn and beans, and gently stir until everything it coated with the dressing.
Taste, adjust the seasoning if necessary, stir in the basil and serve.
