Ingredients

  • 4 (5-ounce) chicken breast, cooked, chopped
  • 1/4 cup chopped cucumber with peel
  • 1/4 cup chopped tomato
  • 1/2 cup chickpeas
  • 1/2 cup medium fuji or macintosh apple with skin, chopped
  • 1 tablespoon chopped walnuts
  • 1/4 cup chopped avocado
  • 1/4 cup chopped celery
  • 2 cup scallions, finely chopped
  • 1 cup to 2 cups chopped romaine lettuce
  • 2 tablespoon to 4 tablespoons low-calorie raspberry vinaigrette

Preparation

Baking Directions:

Place all the greens, the vegetables, the fruit, and the nuts in a bowl.

Toss all the ingredients.

Pour vinaigrette over the mixture.

Toss again, until all the ingredients are coated with the dressing.

Serve on a plate.
