Ingredients
- 4 (5-ounce) chicken breast, cooked, chopped
- 1/4 cup chopped cucumber with peel
- 1/4 cup chopped tomato
- 1/2 cup chickpeas
- 1/2 cup medium fuji or macintosh apple with skin, chopped
- 1 tablespoon chopped walnuts
- 1/4 cup chopped avocado
- 1/4 cup chopped celery
- 2 cup scallions, finely chopped
- 1 cup to 2 cups chopped romaine lettuce
- 2 tablespoon to 4 tablespoons low-calorie raspberry vinaigrette
Preparation
Baking Directions:
Place all the greens, the vegetables, the fruit, and the nuts in a bowl.
Toss all the ingredients.
Pour vinaigrette over the mixture.
Toss again, until all the ingredients are coated with the dressing.
Serve on a plate.
