Chef notes

"The art of eating a single lamb chop is lost," says TODAY's Carson Daly says. Ordering one "lollipop chop" is a power move. It's only 4 or 5 bites of meat and it's even got a small-portioned petite filet beat. Meat craving satisfied, without over indulging."

Siri's Swap Ideas: You can always add any variety of seasonings you'd like. Chopped fresh rosemary or oregano would also be great with lamb.

Siri's Time-Saving Tip: Ask your butcher to properly trim the chops so you don't have to!

Ingredients

  • 4 lollipop lamb chops, 3/4-inch thick (one per person)
  • Extra-virgin olive oil
  • ] ] Salt and pepper
  • Herbes de Provence
  • Fresh lemon juice

Preparation

Marinate the lamb chops in the olive oil, salt, pepper, a dash of herbes de Provence and a squeeze of lemon juice. Marinate at room temperature for an hour.

Heat a grill or grill pan.

Grill the lamb over medium heat for 3 minutes on one side and for 4 minutes on the other for medium-rare chops.
