Deuki Hong's caramelized apple-bacon kimchi spread on sesame toast marries spicy, umami and sweet for what might be the best snack of all time.
Ingredients
- 2 cups chopped kimchi
- 1 cup slab bacon, small dice
- 1 medium apple, small dice
- 1 medium onion, small dice
- 2 cloves garlic, minced
- 1/2 cup honey
- 1/2 cup kimchi juice
- 2 tablespoons coarse Gochugaru (korean chili powder)
- Salt and pepper to taste
Preparation
Render bacon in small pot and add onions to sweat until translucent.
Add the rest of the ingredients and let reduce for 15 minutes.
Cool and serve with toasted bread.
