Calabrian Fried Eggs with Prosciutto

Ingredients

  • 12 slice prosciutto
  • 6 slice eggs
  • 6 slice ciabatta italian bread, cut into 1-inch thick slices (place cookie cutter in the center of each slice and cut each slice 3 inches in diameter)

Preparation

Baking Directions:

In a large non-stick sauté pan, add prosciutto and cook until crispy on both sides.

Remove prosciutto, pour off any excess fat, leaving about 1 tablespoon in the skillet.

Place the sliced Ciabatta bread in the sauté pan.

Crack open 1 egg and place in the center of the bread.

Repeat for each slice of bread.

3.

When the white of the egg becomes firm and almost fully cooked, flip the bread over and cook for 1 minute longer.

Serve immediately.
