- 6 ripe bananas
- 1 pound ricotta cheese
- 1 teaspoon salt
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 4 teaspoon baking soda
- 2 cup all purpose flour
- 4 cup eggs
- 2 quart canola oil
Preparation
Baking Directions:
1.To make vanilla custard: Whisk egg yolks until smooth in a small mixing bowl.
2.Combine sugar, flour, and milk in a saucepan.
Bring to a boil, stirring constantly; remove from heat.
3.Temper a little of the hot milk into the beaten egg yolks then add the entire mixture to the saucepan.
Bring to a boil again, stirring constantly.
4.Remove from heat, add butter and vanilla, set aside to cool; chill well.
5.To make banana donuts: In a large mixing bowl, combine bananas, ricotta, salt, vanilla, cinnamon, baking soda, flour and eggs.
Mix until smooth to form dough.
6.Drop heaping spoonfuls of dough into hot oil at 375° and cook until golden brown.
7.Remove donuts from hot oil, drain on paper towels for a moment, roll in cinnamon sugar, and fill with vanilla custard.
Serve immediately.
