Black Sea Bass, Lemongrass, and Kaffir Lime Leaf

Ingredients

  • 1 tablespoon butter
  • 1 tablespoon (2-pound) whole black sea bass, cleaned and scaled
  • 1 tablespoon vanilla bean
  • 1 stalk lemongrass
  • 1 stalk kaffir lime leaf
  • 1 stalk shallot, diced
  • 2 slice lemon
  • 1 tablespoon coriander
  • 1 tablespoon 750-ml bottle german riesling
  • 1 bunch cilantro, chopped

Preparation

Baking Directions:

Preheat oven to 400 degrees Fahrenheit.

Soak an 18-inch clay pot in cold water for 10 minutes.

Brush the bottom of the clay pot with butter.

Place bass in the pot.

Add the vanilla bean, lemongrass, kaffir lime leaf, shallot, and coriander.

Season with salt and pepper.

Pour Riesling over top.

Cover and bake in preheated oven for 30 minutes.

Sprinkle the cilantro over the cooked fish.
