Joy Bauer's beet carrot ginger juice is packed with beta carotene, antioxidants and vitamin C. "It's a great way to start the morning (with a side of Greek yogurt ... or scrambled eggs for protein) and it's good for the afternoon too," she says.
Ingredients
- 2½ small beets boiled, roasted or canned
- 2 cups baby carrots, baby (approximately 20)
- 1 small apple, Gala cored, peel on
- 1 slice ginger root (1/4-inch-by-2-inches long)
- 1/2 medium lemon, juiced
Preparation
Cut all ingredients so that they fit in your juicer. Turn on juicer and add ingredients. Add back in some pulp for extra fiber. Drink!
