Chef notes

The right combination of good-for-you ingredients will help get your system back on track. Here's why this smoothie is good for you.

Cucumber: With 96 percent water, cucumbers are hydration superstars. They also contain caffeic acid, an antioxidant that helps fight swelling, as well as silica, a mineral that’s touted for keeping the skin healthy. No wonder you always see these green gourds at spas!

Beets: These scarlet beauties are loaded with iron, fiber, and folic acid. Plus, they are a natural source of nitrates, which are beneficial for blood pressure. And they’re only 75 calories per cup.

Ginger: This root fights nausea and indigestion, as well as inflammation.

Lemon: Along with adding a healthy dose of vitamin C, lemons contain health-boosting bioflavonoids.

Ingredients

  • 1 Pink Lady apple (or other sweet-tart variety)
  • 1/2 cucumber, peeled and cut into chunks
  • 1 cup cubed frozen beets (such as Cascadian farm)
  • 2 tablespoons peeled fresh ginger slices
  • 1 lemon, juiced
  • 1/2 cup apple cider
  • 1/2 cup water
  • 1 tablespoon apple cider vinegar, optional

Preparation

Place all of the ingredients in a blender and blend for 1 minute, until smooth.
